Ingredients
2 ripe avocados
100 g fresh raspberries
1 tbsp lemon juice
2 eggs
60 g maple syrup or honey
40 g unsweetened cocoa powder
1 tsp vanilla extract
Pinch of salt
Method
Separate the egg whites from the yolks and place the whites in a large bowl.
Scoop the avocado flesh into a blender with the cocoa, maple syrup, lemon juice, vanilla and egg yolks.
Blend until completely smooth and creamy.
Add a pinch of salt to the egg whites and whisk until stiff peaks form.
Gently fold the egg whites into the chocolate mixture a little at a time.
Divide between four small glasses or bowls, top with the raspberries and refrigerate for at least 2 hours.

This mousse is rich and creamy, so a small serving can be surprisingly satisfying. Serve in small glasses or ramekins to make portioning easy.
Easy Swaps
Swap raspberries for strawberries or blueberries.
Use honey instead of maple syrup.
Add a little cinnamon or orange zest for a different flavour.
