Cocoa, Avocado & Raspberry Mousse

A rich and creamy chocolate mousse made with avocado, cocoa and raspberries. A fibre-rich dessert with plenty of flavour and a smooth, indulgent texture.

Ingredients

  • 2 ripe avocados

  • 100 g fresh raspberries

  • 1 tbsp lemon juice

  • 2 eggs

  • 60 g maple syrup or honey

  • 40 g unsweetened cocoa powder

  • 1 tsp vanilla extract

  • Pinch of salt

Method

  1. Separate the egg whites from the yolks and place the whites in a large bowl.

  2. Scoop the avocado flesh into a blender with the cocoa, maple syrup, lemon juice, vanilla and egg yolks.

  3. Blend until completely smooth and creamy.

  4. Add a pinch of salt to the egg whites and whisk until stiff peaks form.

  5. Gently fold the egg whites into the chocolate mixture a little at a time.

  6. Divide between four small glasses or bowls, top with the raspberries and refrigerate for at least 2 hours.

This mousse is rich and creamy, so a small serving can be surprisingly satisfying. Serve in small glasses or ramekins to make portioning easy.

Easy Swaps

  • Swap raspberries for strawberries or blueberries.

  • Use honey instead of maple syrup.

  • Add a little cinnamon or orange zest for a different flavour.
